Honey-Dijon Roasted Potatoes

Geia sas, let me show you part of out dinner tonight.
Honey-Dijon Roasted Potatoes


24 oz. potatoes, cut into cubes or triangles
2 Tbsp. olive oil
1/2-1 Tbsp. salt (depends on taste)
1 Tbsp. ground black pepper
1Tbsp. Dijon Mustard
1 Tbsp. Honey
2 Tbsp. fresh chives
1/2-1 Tbsp. fresh dill


Preheat oven to 425 degrees F. In large mixing bowl, toss olive oil, salt, pepper, Dijon, & honey. Add potatoes & coat well. Transfer to 9x13 baking dish & bake 25 mins. or until easily pierced with a fork. You can garnish with dill & chives.
Serves 4-6



Here is the sauce, its so amazing! This is the first time we added dill but wow were we glad we did!

Here they are coated & ready to go in the oven.

You'll notice the carmelization of the flavors in the first picture at the top, that is the best part.
Simple & delicious!
